Ingredients/Components
- milk - 2 Tbsp
- sour cream - 1/2 pt
- salt - 1/2 tsp
- butter - 1/4 c
- egg, beaten - 1 item
- chopped onion - 1/2 c
- grated Cheddar cheese - 1 item
- cans cream-style corn - 2 item
- corn muffin mix Jiffy
How to make corn casserole:
Peel and slice eggplant 1/2 inch thick. Mix fine bread crumbs and grated Parmesan cheese in equal portions. With spatula, apply mayonnaise to each slice. Dip in cheese and crumb mixture. Place on slightly oiled cookie sheet. Bake at 325° for 15 minutes or until tender.Recipe categories: Side dish, Corn, Casseroles.
