Ingredients/Components
- milk - 1/3 c
- sour cream - 1 c
- salt - 1/2 tsp
- butter - 1/4 c
- egg, beaten - 1 item
- grated Cheddar cheese - 1 c
- creamed corn - 1 c
- large sweet onion - 1 item
- corn muffin mix
How to make onion shortcake:
Chop onion. Saute slowly in butter. Combine muffin mix, egg, milk and corn. Put in buttered 9 x 12-inch casserole. To onions, add sour cream, salt and 1/2 cup cheese. Spread over corn meal batter. Sprinkle with remaining cheese. Bake at 425° for 35 minutes or until brown and set. Cut in squares and serve warm.Recipe categories: < 60 mins, Side dish, Oven.
