Ingredients/Components

  • sugar - 1/2 c
  • salt - 3/4 tsp
  • baking powder - 4 tsp
  • egg - 1 item
  • sifted flour - 1 c
  • plus 2 Tbsp - 1 c
  • yellow cornmeal - 1 c
  • cooking oil or soft shortening - 4 Tbsp

How to make corn bread:

Sift together in a large bowl the flour, cornmeal, salt, sugar and baking powder. Add the milk and egg. Beat for 1 minute, then add the cooking oil or soft shortening. Beat for 1 more minute. Place 2 teaspoons oil in an 8-inch cake pan. Pour in batter. Oil will rise, greasing pan. Bake in a 375° oven for 25 minutes. Split and toast any left.
