Confetti scalloped potatoes
Ingredients/Components
- margarine - 1/2 c
- onion, chopped - 1/2 c
- pkg - 1 oz
- can cream of mushroom soup - 1 item
- soup can of milk - 1 item
- Cheddar cheese, shredded - 1 c
- green pepper, cut into thin strips - 1 sm
- pimento, chopped - 2 Tbsp
- dash of pepper - 1 item
- Ritz cracker crumbs, divided - 1 c
How to make confetti scalloped potatoes:
Melt margarine in a skillet over medium heat. Saute onion until tender. Stir in potatoes, soup and milk. Add cheese, green pepper, pimento, pepper and 1/2 of the crumbs. Pour into a 9 x 13 casserole dish and top with remaining crumbs. Bake at 375° for 35-40 minutes. Yields 6-8 hearty servings.Recipe categories: Side dish, Potato, Vegetables.
