Ingredients/Components

  • butter or margarine - 2 Tbsp
  • paprika - 1 item
  • mayonnaise - 1/2 c
  • carrots
  • salt and pepper - 1 item
  • chopped parsley - 1 item
  • boiling salted water - 1 item
  • fine cracker crumbs - 1/4 c
  • Kraft horseradish sauce - 2 Tbsp
  • cooking liquid from carrots - 1/4 c
  • minced onion or instant minced onion - 1 Tbsp

How to make company carrots:

Cook the whole carrots in boiling, salted water until tender. Reserve 1/4 cup of the cooking liquid. Drain carrots; cut lengthwise into narrow strips and arrange in shallow baking dish (8 or 9-inch square). Combine reserved cooking liquid with mayonnaise, onion, horseradish sauce and salt and pepper. If desired, at this point, the carrots and sauce may be refrigerated.

Just before mealtime, pour sauce over carrots. Sprinkle cracker crumbs on top and dot with butter. Sprinkle paprika and parsley over top. Bake, uncovered, in a 375° oven for 15 to 20 minutes. Makes 6 servings.
