Ingredients/Components

  • sugar - 2 tsp
  • chopped pecans - 1/2 c
  • milk - 1 c
  • salt - 1/2 tsp
  • butter - 2 Tbsp
  • eggs, separated - 2 item
  • nutmeg - 1/2 tsp
  • raisins - 1/2 c
  • boiled and mashed sweet potatoes - 2 c
  • miniature marshmallows for topping - 1 item

How to make sweet potato souffle:

Scald milk with salt, sugar, butter and nutmeg. Add potatoes, nuts and raisins. Beat egg yolks. Add to mixture. Mix well. Fold in egg whites and pour in 1 1/2-quart casserole dish. Bake at 325° for 45 minutes until set. Top with marshmallows. Return to oven until marshmallows are melted and slightly brown.
