Sweet potato souffle
Ingredients/Components
- sugar - 2 tsp
- chopped pecans - 1/2 c
- milk - 1 c
- salt - 1/2 tsp
- butter - 2 Tbsp
- eggs, separated - 2 item
- nutmeg - 1/2 tsp
- raisins - 1/2 c
- boiled and mashed sweet potatoes - 2 c
- miniature marshmallows for topping - 1 item
How to make sweet potato souffle:
Scald milk with salt, sugar, butter and nutmeg. Add potatoes, nuts and raisins. Beat egg yolks. Add to mixture. Mix well. Fold in egg whites and pour in 1 1/2-quart casserole dish. Bake at 325° for 45 minutes until set. Top with marshmallows. Return to oven until marshmallows are melted and slightly brown.Recipe categories: Side dish, Potato, Vegetables.
