- eggs - 4 item
- milk
- salt - 1 Tbsp
- flour
- baking powder
- melted butter - 3 Tbsp
- pepper to taste - 1 item
- chicken, cut up - 1 item
How to make colonial chicken:
Roll chicken in flour, salt and pepper. In a large frying pan brown chicken on all sides. In a large mixing bowl, combine flour, baking powder and salt. In second bowl mix 4 eggs and milk until light, then mix in butter. Slowly blend egg mixture into dry mixture. Beat until smooth. Pour batter into greased 13 x 9-inch pan. Place chicken in batter. Bake 1 hour at 350°.If available, use insides of chicken to make stock for gravy.
