Coconut oatmeal cookies
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla
- milk - 3 Tbsp
- butter or margarine - 1 c
- salt - 1/2 tsp
- soda - 1/2 tsp
- sifted flour
- toasted oatmeal - 2 c
- toasted, flaked coconut - 2/3 c
How to make coconut oatmeal cookies:
Cream the butter and sugar. Add eggs, milk and vanilla, beating well. Sift together the dry ingredients; add to creamed mixture, blending well. Stir in oats and coconut.Drop from teaspoon, approximately 2 inches apart, onto ungreased cookie sheet. Flatten with a tumbler or glass dipped in sugar. If desired, sprinkle with untoasted coconut. Bake in a hot oven (400°) for 8 to 10 minutes or until lightly browned.
