  • sugar - 2 c
  • eggs - 4 item
  • vanilla - 1 tsp
  • milk - 1 c
  • stick margarine - 1 item
  • water
  • stick butter - 1 item
  • self-rising flour
  • plain flour
  • frozen coconut - 12 oz

How to make coconut cake:

Filling:1 1/2 c. water1 1/2 c. sugar12 oz. frozen coconut2 Tbsp. plain flour1 tsp. vanilla Cream together butter and margarine. Gradually add sugar, creaming until light and fluffy. Beat 10 minutes with electric mixer. Add eggs, one at a time, to cream mixture. Add flour, alternating with milk and vanilla, beating after each addition until smooth. Pour into three 9-inch pans, greased well (or use Pam spray).

Bake at 350° for 30 to 35 minutes. Let cool 5 to 10 minutes. Turn on rack to cool.

Prepare filling by mixing water, sugar and flour. Bring to a boil. Boil for 3 to 5 minutes. Add coconut and boil about 3 minutes longer. Add vanilla and mix well. Spread between cooled layers and on top. Enjoy.
