Ingredients/Components
- brown sugar - 1 lb
- eggs, separated - 6 item
- baking powder - 1 tsp
- pineapple - 1/2 lb
- shelled pecans - 1 lb
- cherries - 1/2 lb
- plain flour, sifted - 4 c
- or 2 1/2 Tbsp
- butter 1/2 margarine, 1/2 butter - 1 lb
How to make pecan cake:
Cream butter and sugar. Add egg yolks, one at a time. Beat well after each. Add 2 cups of flour with baking powder. Add all extract. Use 2 cups of flour to dredge fruit and nuts. Fold into creamed mixture. Beat egg whites stiff and fold into batter. Let stand overnight.Next morning, place in a greased and floured steeple (tube) pan without stirring. Bake 2 1/4 hours at 300°. Place a pan of water in oven while baking.
