  • clams - 2 doz
  • onion - 1 item
  • slices crisp bacon - 3 item
  • potatoes - 2 item
  • salted boiling water - 2 c
  • salt and pepper - 1 item
  • butter - 1 item
  • dash of thyme - 1 item
  • parsley - 1 item

How to make clam chowder:

Strain clams. Save liquid. Chop clams. Saute onion in 2 tablespoons of bacon fat until brown. Simmer potatoes in water until tender. Add reserved clam liquid, bacon, onion, salt and pepper to taste; simmer for 5 minutes. Add milk; bring to a boil. Add clams and barely heat through. Taste and correct seasoning. Add butter and thyme to each serving. Cook clams first. Add thyme. Put parsley on for decoration.
