Ingredients/Components

  • salt - 1/4 tsp
  • sliced green onions - 1/4 c
  • medium potatoes - 4 item
  • shredded Monterey Jack cheese - 1/2 c
  • fresh chopped parsley - 1/4 c
  • clove minced garlic - 1 item
  • fresh cilantro - 1/2 c
  • low-fat Ricotta cheese - 1/4 c
  • white ground pepper - 1/4 tsp

How to make cilantro potatoes:

Wash and bake potatoes in oven at 400° for 45 minutes to 1 hour or until done. While potatoes are baking, combine the remainder of the ingredients and toss it lightly in a bowl. When potatoes are done, remove from the oven and let them cool to the touch. Cut the potatoes in half lengthwise and fluff with a fork. Top each potato with approximately 1/4 of the topping mixture. Return to oven or microwave just long enough to melt cheese. Serve immediately.
