  • vanilla - 2 tsp
  • milk - 3 c
  • semi-sweet chocolate chips - 2 oz
  • margarine or butter
  • corn syrup - 2 Tbsp
  • powdered sugar
  • Cool Whip - 8 oz
  • vanilla instant pudding - 2 pkg
  • box graham crackers - 1 item

How to make chocolate eclair cake:

Chocolate Topping:6 Tbsp. margarine or butter2 oz. semi-sweet chocolate chips2 Tbsp. corn syrup3 Tbsp. milk2 tsp. vanilla1 1/2+ c. powdered sugar Cake: Mix pudding powder with milk; mix until pudding-like. Add Cool Whip. Mix until blended. Set in refrigerator for 5 to 10 minutes. On the bottom of a 13 x 9-inch pan, put a single layer of graham crackers. Pour half of pudding mixture on top of graham crackers. Spread evenly. Add another layer of crackers. Now, add remaining pudding mixture. Spread evenly. Add one last layer of graham crackers. Refrigerate while making Chocolate Topping.

Chocolate Topping: In a medium saucepan, melt margarine and chocolate chips together. Add corn syrup, vanilla, 3 tablespoons of milk and powdered sugar. When blended, remove from heat. Evenly pour on top of cake. Set in refrigerator to chill. Let this set for awhile so that the crackers will soften.
