Chocolate covered cherries
Ingredients/Components
- butter, softened - 1/4 c
- confectioners sugar - 2 c
- light corn syrup - 1 Tbsp
- milk chocolate
- cherry flavored liqueur - 1 Tbsp
- jars maraschino cherries with stems - 2 oz
How to make chocolate covered cherries:
Drain cherries. Let dry on paper towels overnight. In a small bowl, combine butter, liqueur and corn syrup. Stir in confectioners sugar; knead until smooth. Cover. Form a heaping 1/2 teaspoonful around each cherry. Place on waxed paper covered cookie sheet; refrigerate.In top of double boiler, melt candy coating over hot water. Holding cherries by the stem, dip quickly into melted coating, being sure to completely cover; set on wax paper covered cookie sheet. Refrigerate 30 minutes to set coating. Dip each coated cherry a second time in coating (it may be necessary to reheat coating over low heat). Refrigerate double-dipped cherries to set coating. Store in covered container at room temperature for 2 weeks to allow cherries to ripen.
