Ingredients/Components
- medium zucchini, cut into 1-inch slices - 4 item
- small onion, thinly sliced - 1 item
- curry powder - 1/2 tsp
- can ready-to-serve chicken broth - 1 1/2
- half and half - 1/2 c
- salt - 1/8 tsp
- dash of pepper - 1 item
- sour cream - 1 item
How to make chilled zucchini soup:
In a 3-quart pan, combine zucchini, onion and curry. Add broth. Over medium heat, heat to boiling; cover and simmer 45 minutes. Blend until smooth. In a medium bowl, combine zucchini mix, half and half, salt and pepper. Cover and refrigerate until serving (at least 2 hours).Recipe categories: Soups & stews, Bisques/cream soups, Stocks.
