Chicken vegetable soup
Ingredients/Components
- salt and pepper to taste - 1 item
- stalks celery - 2 item
- canned tomatoes - 2 c
- boneless, skinless chicken breast - 1 item
- sprinkle of parsley - 1 item
- medium onion, coarsely chopped - 1 item
- large carrot, peeled and thinly sliced - 1 item
- dry pasta bow shells, elbows, etc - 1 c
- medium zucchini, cut in small pieces - 1 item
How to make chicken vegetable soup:
Cut chicken in bite size pieces. In large saucepan or Dutch oven in 2 tablespoons vegetable oil, saute chicken and onions until done. Add 4 cups water, tomatoes, carrots and pasta. Bring to a boil, reduce heat to low. Cover and cook until pasta is almost tender (about 10 minutes). Add zucchini and parsley. Cover and cook 5 minutes more.
