Ingredients/Components

  • flour - 1/4 c
  • butter - 3 Tbsp
  • light cream - 1 c
  • chopped celery - 1 c
  • Parmesan cheese - 1/3 c
  • salt and pepper to taste - 1 item
  • fine noodles - 1/2 lb
  • onion - 1 item
  • small can peas, drained - 1 item
  • small can mushrooms, drained - 1 item
  • pepper, chopped - 1 item
  • stewing chicken - 3 lb
  • bread crumbs or chow mein noodles - 1 item

How to make chicken tetrazzini:

Prepare chicken by simmering, then take off bones and cut in large pieces and refrigerate. One hour before serving, take broth from chicken and bring to boil. Add noodles. Cook 8 minutes. Set aside.

Make thick sauce of butter, flour and cream. Add chicken, mushrooms, peas, celery, onion and pepper to sauce. Put noodles in large buttered baking dish. Pour chicken over. Top with bread crumbs or noodles. Bake at 450° for 15 minutes.
