  • flour - 2 Tbsp
  • butter
  • all-purpose flour - 1 item
  • egg, well beaten - 1 item
  • egg yolk - 1 item
  • Parmesan cheese - 1 Tbsp
  • fine dry bread crumbs - 1/4 1/3
  • shredded Cheddar cheese
  • salt and pepper to taste - 1 item
  • Ricotta cheese - 1/2 c
  • slices Mozzarella cheese - 4 item
  • chicken breasts, deboned - 4 item

How to make cheesy chicken breasts:

Hot Cheese Sauce:2 Tbsp. butter2 Tbsp. flour1 1/4 c. milk1 1/2 c. shredded Cheddar cheese salt and pepper to taste Hot Cheese Sauce: Melt butter in saucepan. Stir in flour. Add milk. Cook, stirring, until thick. Add cheese. Add salt and pepper to taste.

Place chicken halves between pieces of plastic wrap. Flatten with mallet to form thin cutlets. Place slice of Mozzarella cheese on each cutlet. Mix Ricotta and Parmesan cheeses with egg yolk. Divide among cutlets, placing a spoonful at wide end of each cutlet. Roll up from wide end. Roll each in flour; dip in egg and coat with crumbs. Secure with toothpicks. Brown chicken on both sides in hot oil and arrange in 1 1/2-quart baking dish. Bake at 350° for 25 minutes. Transfer rolls to hot serving dish, removing toothpicks. Cover with hot cheese sauce. Sprinkle with minced parsley.
