  • carbonated water - 1/4 c
  • pepper - 1/4 tsp
  • dash of pepper - 1 item
  • slightly beaten eggs - 4 item
  • chicken - 1 (4
  • stalks celery, sliced - 3 item
  • carrots, sliced - 2 item
  • parsnips, sliced - 2 item
  • leek, sliced - 1 item
  • onions, cut up - 2 item
  • chicken fat - 1/4 c
  • dried dill weed optional - 1/4 tsp
  • or 5 parsley sprigs - 4 item
  • recipe Matzo Balls - 1 item
  • Bring to boiling; reduce heat and simmer covered for 1 hour to 1 1/2 hours

How to make chicken soup with matzo balls:

Place chicken, water, onions, leek, celery, salt and pepper in 8 to 10-quart Dutch oven. Bring to boiling; reduce heat and simmer covered for 1 hour to 1 1/2 hours. Add carrots and parsnips; simmer covered for 30 more minutes. Remove chicken and refrigerate if you are not planning to use as main meal. Lift vegetables from broth with slotted spoon, then strain broth. Return vegetables to broth. Add parsley and dill if desired. Heat through and serve in bowls with Matzo Balls. Serves 15.

For a Main Dish Soup: Remove the meat from the bones. Cube and return to the broth and vegetables.Matzo Balls:1 c. matzo meal1 tsp. salt dash of pepper4 slightly beaten eggs1/4 c. chicken fat1/4 c. carbonated water In bowl, combine matzo meal, salt and pepper. Beat in eggs and chicken fat until well blended. Stir in carbonated water. Cover and chill at least 2 hours. With wet hands, shape dough into 1 inch balls. Carefully drop dough into gently boiling salted water. Cover; simmer 30 minutes or until done (they should be light and cooked all the way through). Do not uncover pot until end of cooking. Remove carefully with slotted spoon. Serve in hot chicken soup. Makes about 30 balls. Good recipe for Seder Meal.
