Chicken loaf
Ingredients/Components
- salt - 1/2 tsp
- flour - 1/4 c
- lemon juice - 1 tsp
- eggs, well beaten - 5 item
- paprika - 1/8 tsp
- chicken broth - 3 c
- bread crumbs - 2 c
- chopped parsley - 1 tsp
- green onions, chopped - 4 item
- cooked rice - 1 c
- chopped pimentos - 2 Tbsp
- chicken stock - 2 c
- Let cool in broth
- fresh or 1 large can mushrooms - 1/4 lb
How to make chicken loaf:
Boil chicken in seasoned water until tender. Let cool in broth. Skin and cut in 1-inch cubes. Mix everything together. Bake in greased 3-quart casserole for 1 hour at 350°. Serve with following Mushroom Sauce. Serves 8 to 10.Mushroom Sauce:1/2 c. oleo1/4 c. flour1/4 lb. fresh or 1 large can mushrooms2 c. chicken stock1/8 tsp. paprika1 tsp. lemon juice1 tsp. chopped parsley Cook mushrooms in oleo 5 minutes. Add flour and stir. Add stock and cook until thickened. Season to taste. Stir in parsley and lemon juice before serving.Recipe categories: Chicken, Main dish, Poultry.
