Ingredients/Components

  • salt - 2 Tbsp
  • shortening - 1 Tbsp
  • oleo - 2 Tbsp
  • ground beef
  • chopped parsley - 1/4 c
  • large onion, chopped - 1 item
  • red pepper - 1/2 tsp
  • seasoned bread crumbs - 1/4 c
  • ground pork - 2/3 lb
  • fryers - 2 item
  • oyster liquid - 3/4 c
  • chopped shallot tops - 1/4 c
  • oysters, drained and chopped - 2 doz

How to make stuffed chicken:

Combine salt and pepper, reserving 1 teaspoon for the stuffing. Season fryers well, rubbing inside and out, then rub the outside with oleo.

Prepare stuffing as follows: Add 1 teaspoon salt and pepper mixture to ground beef and pork. Brown in hot shortening over moderate heat, stirring often (10 minutes). Add onions and oysters. Simmer 5 minutes. Add parsley, celery, shallots, bread crumbs and oyster liquid. Simmer 10 minutes longer. Stuff fryers. Place in foil and bake in a 375° oven for 1 to 1 1/2 hours. Serves 8.
