Ingredients/Components
- salt - 2 tsp
- flour - 1/4 c
- eggs, beaten - 4 item
- cream - 1/4 c
- lemon juice - 1/2 tsp
- paprika - 1/8 tsp
- pepper - 1/8 tsp
- chicken broth - 2 c
- soft bread crumbs - 2 c
- chopped parsley - 1 item
- rice, cooked - 1 c
- chicken, cooked and diced - 3 c
- pimento, chopped - 1/4 c
- mushrooms, drained - 4 oz
- Mushroom Sauce - 1 item
- Add broth, then eggs
How to make chicken loaf:
Combine chicken, rice, crumbs and salt. Add broth, then eggs. Stir in pimento. Pour into greased 9 x 13 x 2-inch baking dish. Bake in a 300° oven for 45 minutes to an hour or until firm. Cut into squares and serve with Mushroom Sauce.Mushroom Sauce:1/4 c. butter4 oz. mushrooms, drained1/4 c. flour1/4 c. cream1/2 tsp. lemon juice1/2 tsp. salt1/8 tsp. pepper2 c. chicken broth1/8 tsp. paprika chopped parsley Melt butter. Add and brown mushrooms. Stir in flour, salt and pepper. Add broth and cream. Cook until thickened, stirring. Add lemon juice, paprika and parsley.Recipe categories: Chicken, Main dish, Poultry.
