Chicken fajitas
Ingredients/Components
- lemon juice - 2 Tbsp
- garlic salt - 1/2 tsp
- dried oregano, crushed - 1/2 tsp
- chopped onion - 1/4 c
- medium tomato - 1 item
- chopped green pepper - 1/4 c
- ground cumin - 1/2 tsp
- lettuce - 1 item
- cheese optional - 1 item
- dashes hot pepper sauce optional - 2 item
- sour cream or low-fat yogurt - 1 item
- boned skinless chicken breast or turkey - 12 oz
- to 8-inch flour tortillas - 7 item
How to make chicken fajitas:
Combine lemon juice, garlic salt, cumin, oregano and hot pepper sauce. Slice poultry into thin bite size strips. Add to juice minutes. Toss lightly to coat and set aside. Chop tomato and shred lettuce. Set them aside in serving bowls. Spray large skillet with nonstick spray. Preheat skillet over high heat. Add undrained poultry mixture, onion and green pepper to skillet. Cook and stir for three minutes or until poultry is tender and no longer pink and liquid has evaporated. Put in serving bowl.To serve, assemble your own, spoon poultry mixture across the center of a tortilla. Add tomato, lettuce, cheese and sour cream. Fold tortilla around meat and toppings.
