Chicken fajitas
Ingredients/Components
- oil - 1/2 c
- red wine vinegar - 1/4 c
- lime juice - 1/3 c
- finely chopped onion - 1/4 c
- cloves garlic, minced - 2 item
- sugar - 1 tsp
- dried oregano - 1 tsp
- salt - 1/2 tsp
- pepper - 1/2 tsp
- cumin - 1/2 tsp
- whole chicken breasts, halved, skinned and boned - 3 item
- flour tortillas - 1 item
- chopped tomatoes - 1 item
- chopped onions - 1 item
- sliced avocado - 1 item
- salsa - 1 item
- shredded Monterey Jack cheese - 1 item
How to make chicken fajitas:
Combine first 10 ingredients; mix well. (Can use a blender or food processor.) Coat chicken with marinade. Cover and put in refrigerator for 4 or more hours, stirring occasionally. Drain chicken; grill on grill 8 to 10 minutes per side or until cooked through. (In winter broil under broiler.) Slice in thin slices. Wrap tortilla in foil and warm through.
