Chicken enchiladas
Ingredients/Components
- sour cream - 1 pt
- salt - 1/2 tsp
- chopped onion - 1/2 c
- cans cream of chicken soup - 2 item
- green chilies - 1/2 c
- grated Monterey Jack cheese - 2 c
- flour tortillas - 1 doz
- can sliced olives - 4 oz
- to 4 chicken breasts, cooked and chopped up - 3 item
How to make chicken enchiladas:
Mix chicken with onion, olives and 1/2 cup of the cheese. Place chicken mixture on tortillas. Roll up and line up in a 9 x 13-inch pan. In saucepan, heat soup, chilies, salt and sour cream. Cook until smooth. Pour over tortillas. Sprinkle with remaining cheese. Bake in 350° oven for 30 minutes. Serve with salad, rice/beans and dessert.
