Ingredients/Components

  • water
  • grated Parmesan cheese - 2/3 c
  • uncooked rice - 1 c
  • Italian seasoning, divided - 1 tsp
  • can whole tomatoes, undrained and broken up - 1 1/2
  • processed cheese spread Velveeta, cubed - 1/2 lb
  • finely chopped onion more or less to your liking - 1/4 c
  • garlic powder more or less to your liking - 1/4 tsp
  • chicken, cut into 8 pieces or 8 breasts cutlets - 1 item

How to make italian chicken and rice:

Preheat the oven to 375°. In a greased 9 x 13-inch baking pan, mix the water, rice, tomatoes, cheese spread, onion, garlic powder and 1/2 teaspoon Italian seasoning. Top the mixture with the chicken pieces/breasts and sprinkle with Parmesan cheese and remaining Italian seasoning.

Bake for 50 to 60 minutes or until chicken is fork-tender and no pink remains. Remove from the oven and let stand for 5 to 10 minutes before serving.
