Chicken enchiladas
Ingredients/Components
- shredded Cheddar cheese - 2 c
- can cream of mushroom soup - 1 item
- chopped green onions - 3 item
- chicken breasts, cooked and cut up - 2 item
- small can Ortega chilies - 1 item
- small can sliced olives - 1 item
- sour cream I use light, 40% less fat - 1 pt
- to 10 flour tortillas medium - 8 item
How to make chicken enchiladas:
Mix chicken, soup, sour cream, onions and chilies. Spoon small amount of mixture into tortillas. Sprinkle cheese over this. Roll tortillas up and place in shallow pan. Spread remaining mixture over this and sprinkle cheese over all. Bake at 350° to 375° for 15 to 30 minutes.Recipe categories: Chicken, Main dish, Poultry.
