Ingredients/Components

  • pepper - 1/4 tsp
  • garlic salt - 1/8 tsp
  • chopped onion - 1/4 c
  • chili powder - 1 Tbsp
  • can cream of chicken soup - 1 item
  • chicken broth - 1 c
  • can cream of mushroom soup - 1 item
  • can chopped green chilies - 1 oz
  • Cheddar cheese, grated - 1 lb
  • corn chips - 4 c
  • chicken breasts, cooked, boned and chopped - 3 lb

How to make chicken enchilada pie:

Combine soups, green chilies and spices with chicken broth. (You may need additional broth to get desired consistency.) Blend well.

Preheat oven to 350°. Cover the bottom of a 3-quart casserole dish with 2 cups corn chips. Spread half the chopped chicken over corn chips and half the sauce, then top with half of the grated cheese. Repeat, ending with cheese.

Bake at 350° for 30 minutes. Bake, covered, for first 20 minutes and uncover for the last 10 minutes. Serves 8.
