Ingredients/Components

  • garlic powder - 1/4 tsp
  • chopped onion - 1/2 c
  • chili powder - 1 Tbsp
  • can cream of chicken soup - 1 item
  • chicken broth - 1 c
  • can cream of mushroom soup - 1 item
  • Tabasco sauce - 1/4 tsp
  • black pepper - 1/4 tsp
  • can chopped green chilies - 1 oz
  • sharp Cheddar cheese, grated - 8 oz
  • corn chips - 4 c
  • chicken breasts, cooked, boned and cubed - 6 item

How to make chicken enchilada casserole:

Combine soups, chilies, spices, Tabasco sauce and 1 cup broth. Mix well. Cover bottom of a 9 x 13-inch pan with 2 cups corn chips. Spread 1/2 of chicken over this, then half of sauce mix and half of the grated cheese. Repeat, ending with cheese. Bake at 350° for 30 minutes.
