  • can cream of mushroom soup - 1 item
  • can cream of chicken soup - 1 item
  • can chopped green chilies - 4 oz
  • Tabasco - 1/4 tsp
  • chicken broth - 1 c
  • garlic powder - 1/8 tsp
  • chili powder - 1 tsp
  • minced onion - 4 tsp
  • pepper - 1/4 tsp
  • Fritos regular size - 4 c
  • grated Cheddar cheese - 8 oz

How to make chicken enchilada casserole:

Cook and debone chicken. Chop chicken. Save 1 cup broth. Combine soups, chilies, Tabasco and broth. Cover bottom of 3-quart casserole with 2 cups Fritos. Spread half of chicken, half of liquid and half of cheese. Repeat layers. Cook at 350°, uncovered, for 30 minutes.
