Chicken curry
Ingredients/Components
- milk - 1 c
- butter - 1 Tbsp
- cornstarch - 2 Tbsp
- cold water - 2 Tbsp
- curry powder - 1 Tbsp
- onion, chopped - 1 item
- mushrooms, sliced - 1/2 c
- lite cream - 1 c
- cooked chicken, diced - 2 c
- stalks celery, chopped - 2 item
- beef broth - 1/2 c
- unpeeled apple, diced - 1 c
How to make chicken curry:
Melt butter and brown curry powder in it. Add onion, mushrooms, celery and apple to curried butter; mix thoroughly. Add beef broth and bring to just a boil. Add lite cream and milk. Return to a boil. Mix cornstarch and water; add to sauce until thickened. Salt to taste. Add diced, cooked chicken and heat. Serve over hot rice with condiments (raisins, sauteed onions, nuts, chutney, coconut, etc.).
