Chicken cacciatore
Ingredients/Components
- salt - 1/2 tsp
- flour - 1/3 c
- oil - 1/4 c
- chicken broth - 1/2 c
- bay leaf - 1/2 item
- can tomato sauce - 1 oz
- thyme leaves - 1/8 tsp
- sliced mushrooms
- green pepper, chopped - 1 item
- clove minced garlic - 1 item
- marjoram leaves - 1/8 tsp
- shallots, chopped - 2 Tbsp
- white or black pepper - 1/4 tsp
- small chickens, cut up - 2 item
- tomatoes, peeled and chopped or canned tomatoes - 5 item
How to make chicken cacciatore:
In a large skillet, heat oil. Dry chicken and coat with flour. Fry until brown. Remove from skillet. Saute shallots, garlic and green pepper until tender. Mix in remaining ingredients (except mushrooms). Return chicken to pan and bring to a boil. Cover and simmer 30 minutes. Add mushrooms; cook, uncovered, for 15 minutes. Remove chicken to serving dish. Before pouring sauce over chicken, check to see if it is thick enough. If not, add 1 tablespoon of flour, then pour over chicken.
