Ingredients/Components

  • sliced almonds - 1 pkg
  • lemon juice - 1/4 c
  • chopped onion - 1/2 c
  • chopped celery - 1/2 c
  • chicken broth - 1 c
  • mayonnaise - 1/2 c
  • salt and pepper - 1 item
  • cans cream of chicken soup - 2 item
  • cooked rice - 2 c
  • diced cooked chicken - 4 c
  • hard-boiled eggs - 2 item
  • bread or cracker crumbs - 1 c

How to make chicken and rice casserole:

Combine all ingredients, stirring well. Spoon into greased casserole pan. Slice eggs on top; top with bread or cracker crumbs. Bake, uncovered, at 350° for 40 to 45 minutes, or until bubbly. Almonds are optional.
