Chicken and dumplings
Ingredients/Components
- milk - 1/2 c
- salt - 1/4 tsp
- baking powder - 1 tsp
- all-purpose flour - 2/3 c
- cooking oil - 2 Tbsp
- pepper - 1/3 tsp
- onion, chopped - 1/2 c
- chicken breasts - 2 to
- carrots, sliced - 2 c
- poultry seasoning - 1/2 tsp
- parsley, snipped - 1 Tbsp
- celery, sliced - 1 c
How to make chicken and dumplings:
In a bowl, mix flour, parsley, baking powder, and salt. Mix milk and oil and pour into flour mixture. Stir with a fork until combined. Drop from a tablespoon into six mounds directly onto chicken (do not drop batter into liquid). Cover; simmer about 12 minutes or until a toothpick inserted into dumplings comes out clean. Using a slotted spoon, transfer chicken, dumplings and vegetables to a platter; cover.For gravy, skim fat from broth and discard. Measure 2 cups broth into the Dutch oven. Slowly stir 1/2 cup cold water into flour. Stir into broth. Cook and stir until bubbly. Cook and stir 1 minute more. Season to taste with salt and pepper. Serve gravy over chicken and dumplings.
