Chicken and dumplings
Ingredients/Components
- salt - 1/2 tsp
- flour
- baking powder - 1/2 tsp
- shortening - 3 Tbsp
- salt and pepper - 1 item
- fat hen - 1 item
- lots of water for broth - 1 item
How to make chicken and dumplings:
Dumplings:2 c. flour3 Tbsp. shortening1/2 tsp. salt1/2 tsp. baking powder Cook hen in water until tender. Be sure and have plenty of broth when chicken is done. Remove chicken from broth and make dumplings.Mix dumpling ingredients well. Add enough warm water to make a stiff dough. Roll thin on a floured board. Let stand 20 to 30 minutes before adding to boiling broth. Cut in squares and drop into rapidly boiling broth. Be sure to have enough liquid. Turn fire low after dropping in dumplings and let cook 10 minutes. Taste for seasoning (salt and pepper). Add if necessary. Mix 1 tablespoon flour into 1 cup milk (be careful of lumps); add to dumplings and boil a minute. Add deboned and fat removed chicken, cut into small pieces.
