Chewy oatmeal raisin cookies
Ingredients/Components
- granulated sugar - 1/2 c
- vanilla extract - 2 tsp
- salt - 1/2 tsp
- baking soda - 1 tsp
- all-purpose flour - 2 c
- large egg whites - 4 item
- packed dark brown sugar - 3/4 c
- dark seedless raisins - 1 c
- quick cooking or old fashioned oats uncooked - 1 c
- extra light olive oil - 1/4 c
How to make chewy oatmeal raisin cookies:
Preheat oven to 375°. Coat large cookie sheet with nonstick cooking spray.In medium bowl, combine flour, oats, raisins, sugars, baking soda and salt; set aside. With spoon, stir in oil, vanilla and egg whites and mix just until evenly moistened.
Drop dough by level tablespoon (dough will be sticky), 2-inches apart, on cookie sheet. Bake cookies 10 to 12 minutes or until lightly browned around edges. Transfer cookies to wire rack to cool completely. Repeat with remaining dough. Store cookies in tightly covered container up to 1 week. Has 2 fat grams per cookie.
