Cheesy vegetable soup
Ingredients/Components
- butter or margarine - 3 Tbsp
- salt - 1/2 tsp
- flour - 3 Tbsp
- heavy cream - 1 c
- egg yolk - 1 item
- garlic powder - 1/4 tsp
- chopped celery - 1/2 c
- chopped carrots - 3/4 c
- shredded Swiss cheese
- dried thyme - 1/4 tsp
- chopped broccoli - 2 c
- small chopped onion - 1 item
- each cans chicken broth - 2 1/2
How to make cheesy vegetable soup:
Melt butter in heavy 4-quart saucepan; add flour. Cook and stir until thick and bubbly; remove from heat. Gradually blend in broth. Add broccoli, carrots, celery, onion, salt, garlic powder and thyme. Return to heat and bring to a boil. Reduce heat, cover and simmer for 20 minutes or until veggies are tender.In a small bowl, blend yolk and cream. Gradually blend in several tablespoons of hot soup, return all to saucepan, stirring until slightly thickened. Simmer for another 15 minutes. Stir in cheese and heat over medium heat until melted.
