- Beat cream cheese at high speed of electric mixer until light and fluffy
How to make cheesecake:
Press graham cracker crust mixture into a 10-inch spring-form pan; set aside. Beat cream cheese at high speed of electric mixer until light and fluffy. Gradually add 1 cup sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in 1/2 teaspoon vanilla. Pour into prepared pan. Bake at 375° for 35 minutes or until set.Beat sour cream at medium speed 2 minutes. Add 3 tablespoons sugar and 1/2 teaspoon vanilla; beat an additional minute. Spread over cheesecake.
Bake at 500° for 5 minutes. Let cool to room temperature on a wire rack. Chill at least 8 hours. Makes 8 to 10 servings.Graham Cracker Crust:1 (5 1/3 oz.) pkg. graham crackers, crushed (about 1 2/3 c.)1/4 c. sugar1/4 c. plus 2 tsp. butter, melted Combine all ingredients in processor.
