Cheesecake bars



  • sugar - 1/2 c
  • eggs - 2 item
  • pkg
  • packed brown sugar - 2/3 c
  • milk - 1/4 c
  • vanilla extract - 1 tsp
  • all-purpose flour - 2 c
  • lemon juice - 2 Tbsp
  • chopped nuts walnuts or pecans - 1 c
  • cold butter no substitutes - 2/3 c

How to make cheesecake bars:

Filling:2 (8 oz.) pkg. cream cheese1/2 c. sugar2 eggs1/4 c. milk2 Tbsp. lemon juice1 tsp. vanilla extract In a bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Stir in nuts. Reserve 1 cup of mixture. Press remaining crumbs onto the bottom of an ungreased 13 x 9 x 2-inch pan. Bake at 350° for 12 minutes.

Meanwhile, in a mixing bowl, beat softened cream cheese and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in milk, lemon juice and vanilla. Pour over crust. Sprinkle with reserved crumbs. Bake 25 to 30 minutes or until edges are lightly browned and filling is almost set. Cool in pan on wire rack. Cut into squares.

For a holiday effect, you may garnish with red or green cherries, if desired. Store in the refrigerator. Yield: 2 dozen.
