Ingredients/Components

  • sugar - 2 Tbsp
  • milk - 1 c
  • salt - 1/4 tsp
  • flour - 1/4 c
  • egg yolks - 5 item
  • margarine - 1/4 c
  • cream of tartar - 1/4 tsp
  • pepper - 1/2 tsp
  • Parmesan cheese - 1 item
  • dash of pepper - 1 item
  • shredded Cheddar cheese - 2 c
  • green pepper, chopped - 1/4 c
  • chopped pimento - 2 Tbsp
  • canned tomatoes
  • Melt margarine in saucepan and blend in flour, salt and pepper

How to make cheese souffle:

Grease a 2-quart dish and sprinkle with Parmesan cheese. Melt margarine in saucepan and blend in flour, salt and pepper. Remove from heat and stir in cheese until melted. Blend a little at a time with yolks. Beat whites until frothy and add cream of tartar. Beat until peaks form. Fold in cheese sauce. Put in dish and place dish in a pan with about 1 inch of water. Bake on the bottom rack. Serve with Creole Sauce.Creole Sauce:1/2 c. chopped onion1/4 c. green pepper, chopped2 Tbsp. chopped pimento2 Tbsp. sugar1/2 tsp. salt1/2 tsp. pepper1 1/2 c. canned tomatoes
