  • milk - 2 c
  • flour - 3 4
  • margarine
  • dash of salt and pepper - 1 item
  • chopped pimento
  • hard-boiled eggs, grated - 4 item
  • soda cracker crumbs - 1 c
  • medium White Sauce - 2 c
  • American or Velveeta cheese, grated - 1/2 lb

How to make cheese pudding:

White Sauce:3 to 4 Tbsp. margarine3 to 4 Tbsp. flour2 c. milk dash of salt and pepper White Sauce: Make in top of double boiler over hot water, using margarine, flour, milk, salt and pepper. Cook until medium thick, stirring to keep smooth.

Line bottom of buttered 2 quart baking dish with half of crumbs. Cover crumbs with half of white sauce. Alternate layers of eggs, cheese and pimento. Repeat layers. Cover with remaining sauce. Sprinkle with remaining crumbs. Dot with margarine. Bake at 350° for 30 to 40 minutes or until bubbly. Yield: 6 to 8 servings.

Note: May be assembled ahead of time and refrigerated until ready to bake. If dish is cold, extra baking time may be required.
