Ingredients/Components
- sour cream
- salt - 1 tsp
- butter - 1/4 c
- pepper - 1/4 tsp
- shredded Cheddar cheese - 2 c
- chopped green onions - 1/3 c
- to 6 medium potatoes - 5 item
How to make cheese potatoes:
Boil the potatoes in the skins. Cool, peel and then shred coarsely. Mix in a saucepan over low heat the cheese and 1/4 cup butter, stirring until almost melted. Remove from heat; blend in sour cream, onions, salt and pepper. Fold in the potatoes. Pour into a greased 2-quart casserole dish. Dot the top with the leftover butter, then bake, uncovered, at 325° to 350° for 30 minutes.Recipe categories: Side dish, Potato, Vegetables.
