Ingredients/Components

  • water - 4 c
  • stick butter - 1/2 item
  • whole eggs - 2 item
  • mild Cheddar cheese - 1/2 c
  • grits - 1 c

How to make cheese grits:

Put water in heavy saucepan and bring to a boil. Add grits and return to boil, stirring frequently until grits thicken. Add butter and cheese, stirring until cheese melts.

Mix small amount of hot grits with eggs. Fold beaten eggs into remaining hot grit mixture, stirring constantly. Pour into a buttered 12 x 8 x 2-inch baking dish. Bake 30 to 45 minutes at 350° until firm.

Note: Old timers claim cheese grits are meant to be eaten on a plate piled high with fresh, fried mullet, hush puppies and cole slaw.
