Carrot spice cake
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- salt - 1/4 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- water
- nutmeg - 1 tsp
- soda - 1/2 tsp
- grated carrots
- baking powder - 1 tsp
- shortening - 1/4 c
- raisins - 1 c
- cloves - 1 tsp
How to make carrot spice cake:
Place carrots, sugar, water, raisins, butter and spices in a pan. Bring to a boil and simmer for 5 minutes. Cool. Sift flour, baking powder, soda and salt together. Add the dry ingredients and nuts to the carrot mixture. Stir until blended. Pour into well-greased and floured ring mold (9-inch). Bake at 350° for 50 minutes. To fill a Bundt pan, double the recipe.
