Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • salt - 1/4 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • water
  • nutmeg - 1 tsp
  • soda - 1/2 tsp
  • grated carrots
  • baking powder - 1 tsp
  • shortening - 1/4 c
  • raisins - 1 c
  • cloves - 1 tsp

How to make carrot spice cake:

Place carrots, sugar, water, raisins, butter and spices in a pan. Bring to a boil and simmer for 5 minutes. Cool. Sift flour, baking powder, soda and salt together. Add the dry ingredients and nuts to the carrot mixture. Stir until blended. Pour into well-greased and floured ring mold (9-inch). Bake at 350° for 50 minutes. To fill a Bundt pan, double the recipe. Frost with Butter Cream Frosting.
