Carrot spice cake
Ingredients/Components
- sugar
- cinnamon - 2 tsp
- salt - 1 tsp
- chopped nuts - 1 c
- butter - 1 c
- water
- nutmeg - 2 tsp
- baking soda - 4 tsp
- all-purpose flour - 4 c
- seeded raisins - 2 c
- finely grated carrots - 3 c
How to make carrot spice cake:
Place carrots, sugar, water, raisins, butter and spices in a saucepan. Bring to a boiling point and cook slowly for 5 minutes. Place pan over ice cubes to cool mixture quickly. Sift flour, baking soda and salt together. Add with nuts to first mixture and mix quickly and thoroughly. Place in a well-greased floured tube pan. Bake in oven at 350° to 375° for 50 minutes or more, about 1 1/2 hours.Recipe categories: Desserts, Cakes, Spring.
