Ingredients/Components

  • salt - 1/8 tsp
  • flour - 1 c
  • water - 1/2 c
  • confectioners sugar - 1 2
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • egg - 1 item
  • raisins - 1/3 c
  • margarine - 2 Tbsp
  • shredded carrots - 1 c
  • honey - 1/2 c
  • ground cloves - 1/8 tsp
  • ground cinnamon - 1 tsp
  • ground nutmeg - 1/4 tsp
  • ground allspice - 1 tsp
  • whole wheat flour - 3/4 c
  • apple juice - 1/2 c

How to make carrot spice cake:

In saucepan, combine apple juice, honey, water, carrots, raisins, margarine and spices. Bring to boil over medium heat. Reduce heat; cover and simmer 10 minutes. Remove from heat and cool 1 hour, stirring occasionally to release steam.

Stir together flour, baking powder, baking soda and salt in large bowl. Preheat oven to 375°. Spray an 8-inch square baking pan with cooking spray. When carrot mix is cool, whisk in egg. Pour into flour mix and stir until well blended.

Pour into the pan and bake 25 to 30 minutes. Cool on wire rack 10 minutes. Remove from pan to cool completely. Dust with confectioners sugar. Makes 16 servings with 115 calories and 2 grams fat per serving.
