Carrot spice cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- cream cheese - 8 oz
- eggs - 4 item
- chopped pecans - 3/4 c
- salt - 1/2 tsp
- nutmeg - 1/2 tsp
- soda - 2 tsp
- grated carrots
- baking powder - 2 tsp
- cloves - 1/2 tsp
- allspice - 1/2 tsp
- box powdered sugar - 1 lb
- dash of vanilla - 1 item
- small can drained crushed pineapple - 1 item
- oil substitute with 1 c
- Beat in eggs all at one time
How to make carrot spice cake:
Blend sugar with oil or applesauce and oil. Beat in eggs all at one time. Sift together baking powder, soda, salt, cinnamon, nutmeg, cloves and allspice, then pour into mixture. Stir in carrots, pecans and pineapple. Turn into greased and floured cake pan and bake at 350° for 45 minutes or until tests done.Frosting:1 stick butter8 oz. cream cheese1 lb. box powdered sugar dash of vanilla Cream butter and cream cheese; add powdered sugar and vanilla.
