Ingredients/Components

  • cinnamon - 1/2 tsp
  • salt - 1/2 tsp
  • flour
  • brown sugar - 1/2 c
  • water - 1 Tbsp
  • nutmeg - 1/8 tsp
  • grated carrots - 2 c
  • baking powder - 1 slightly
  • baking soda - 1/2 tsp
  • oleo - 1 c

How to make carrot pudding:

Cream oleo with sugar. Add egg and water, then the carrots. Sift together the dry ingredients and add to cream mixture. Mix thoroughly. Spoon into greased 6 to 8-cup ring mold. Bake in 350° oven for about 40 minutes. This is a good dish to serve with meats. Serves 6.
