Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1/2 tsp
- flour
- baking soda - 2 tsp
- butter room temperature - 1 c
- pecan pieces - 1 c
- drained, crushed pineapple - 1 c
- grated raw carrots - 1 c
- dried, shredded coconut - 1 c
How to make carrot pineapple cake:
Preheat oven to 325°. Grease 9 x 13-inch pan. Cream butter, sugar and eggs. Sift together dry ingredients; add gradually to butter-egg mixture. Add vanilla, carrots, pineapple, coconut and nuts. Pour into pan; bake until done, about 45 minutes to 1 hour. Remove from oven and let cool. Frost with cream cheese frosting.Recipe categories: Desserts, Cakes, Pineapple.
