  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1/2 tsp
  • flour
  • baking soda - 2 tsp
  • butter room temperature - 1 c
  • pecan pieces - 1 c
  • drained, crushed pineapple - 1 c
  • grated raw carrots - 1 c
  • dried, shredded coconut - 1 c

How to make carrot pineapple cake:

Preheat oven to 325°. Grease 9 x 13-inch pan. Cream butter, sugar and eggs. Sift together dry ingredients; add gradually to butter-egg mixture. Add vanilla, carrots, pineapple, coconut and nuts. Pour into pan; bake until done, about 45 minutes to 1 hour. Remove from oven and let cool. Frost with cream cheese frosting.
