  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 2 c
  • oil
  • baking soda - 2 tsp
  • walnuts - 1 c
  • grated raw carrots - 3 c

How to make carrot cake:

Preheat oven to 300°. Mix together carrots, sugar, oil, eggs and vanilla, then add salt, cinnamon, flour, baking soda and walnuts. Mix well. Bake for 1 1/4 hours.

Low-fat Method: Substitute applesauce for the oil, 6 egg whites instead of 4 eggs and omit the walnuts.
